Banana bread with berries

A very simple, easy and healthy recipe. This banana bread needs 1 hour in the oven, but only a few minutes to prepare. I added some frozen berries, but I am sure fresh berries will make it taste even better.

What I like the most about this banana bread is that is really not that sweet but still satisfy any sweet tooth. So here it goes:

  • 1 and 1/2 cups flour
  • 1/3 cup coconut sugar
  • 1/3 cup coconut oil
  • 200 gr natural yoghurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 bananas
  • 1 tsp cinnamon
  • nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup berries (optional)

Preheat your oven to 180°C. In a bowl mix the flour, cinnamon, nutmeg, baking powder, salt and baking soda. Set aside.

In another bowl whisk the eggs, vanilla, yoghurt, coconut oil and coconut sugar, until well combined.

Cut the bananas in slices and mash them with a fork or put them in a blender for 1-2 minutes.

Pour the bananas in the  bowl with the wet ingredients.

Then add in the dry ingredients and mix well.

Place a sheet of baking paper in your bread pan and pour the batter into it. If you are using berries, fold now the berries. Bake it for 50-60 minutes. Let it cool before cutting into slices.

And there you have my version of banana bread. I hope you’ll enjoy this one!
