A friend of mine invited us for dinner a few days ago and he prepared some shrimp and chorizo in a delicious wine sauce. Since that day I thought about trying this at home. I did some research today and I could only find recipes with white wine. I know shrimp cooked in white wine tastes delicious, but today I couldn’t give up on the red wine.
I was thinking all the time about how chorizo is served in red wine sauce as one of the typical Spanish tapas. And honestly speaking, I didn’t have any white wine left, so I decided to do a little experiment. The result couldn’t be better! I combined this recipe with some pasta and pesto, but I think the chorizo and shrimp could go perfectly with some fresh baguette as an appetizer.
- 1 Spanish Chorizo
- 1/2 onion
- 250 gr shrimps (I had a box of frozen shrimps, but of course fresh is always better)
- 2 cloves garlic
- 1 tomato (medium size)
- 1 cup dry red wine
Cut the chorizo in slices and chop the onion.
Put the tomato in a food processor and blend it completely.
Once the chorizo released its grease and oil (you can see on the picture below), you can add the shrimps. Let them cook just for a few minutes, until you see them turn totally pink. Then add the tomato paste and the cup of wine.
Let it simmer for 8 to 10 minutes. You can not let it simmer for much more than that because the shrimps will turn out very chewy.
